Okonomiyaki is a type of savoury pancake with noodles, cabbage, egg and other toppings covered in the special okonomiyaki sauce. It’s often all mixed together in the batter and put on a hot plate to cook.
Hiroshima has its own style of okonomiyaki.
Instead of mixing it all together, they start by cooking a layer of batter mix. Then putting on some sauce and the cabbage:
Then, they’ll add the toppings. Veggies, meats, crispy puffed rice... even cheese and mochi (a delicious combo).
Next they’ll cook the noodles.

Then the pancake gets flipped to cook the toppings.
And finally cook an egg… put the noodles on top, then put the flipped pancake on top of that.
The finishing touches are okonomiyaki sauce, some dried bonito flakes (and an excessive amount of spring onions in the picture above).
